Recipe Description

Ingredients

  • chicken breast - 16 ounces of chicken breast

    ⌞(substitute boneless chicken thighs)

  • extra virgin olive oil - 2 tablespoons of extra virgin olive oil
  • fresh cilantro - 2 tablespoons of fresh cilantro
  • garlic clove - 3 garlic cloves

    ⌞(minced)

  • gluten-free chicken broth - 1 cup of gluten-free chicken broth
  • homemade Sazón seasoning - 2 tablespoons of homemade Sazón seasoning

    ⌞(You can use store bought or the link to make your own at home)

  • jasmine rice - 1 cup of jasmine rice
  • tomato paste - 2 ½ tablespoons of tomato paste
  • yellow onion - 1 yellow onion

    ⌞(chopped)

Recipe Steps

Chop [ ](chicken breast) into bite-size pieces and then season the chicken with [ ](homemade Sazón seasoning) and set aside.

Set the Instant Pot to Sauté mode. Heat [ ](extra virgin olive oil) and add [ ](yellow onion) (chopped). Sauté for 2-3 minutes until fragrant. Add [ ](garlic clove) (minced) and sauté for another 1-2 minutes.

Stir in [ ](tomato paste) and cook for 1-2 minutes, allowing it to caramelize slightly.

Add chicken and brown slightly on both sides, then remove and set aside.

Add the remaining chicken broth to the pot and deglaze again. Stir in [ ](jasmine rice) (rinsed and drained), ensuring it is evenly distributed.

Secure the lid and set the Instant Pot to "Manual" or "Pressure Cook" on high for 4 minutes. Allow a natural pressure release for 10 minutes, then quick-release any remaining pressure.
