Recipe Steps

Preheat oven to 400°F.

In a large bowl, mix [meatballs](ground chicken) with [meatballs](dried parsley), [meatballs](dried basil), [meatballs](onion powder), [meatballs](garlic powder), [meatballs](pink salt) and [meatballs](gluten-free bread crumbs).

Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.

Arrange the meatballs in a single layer on a baking sheet lined with parchment paper or in your air fryer basket. Spray the meatballs [meatballs](avocado oil spray) and arrange them in a single layer in the air fryer basket. Cook for 20 minutes, turning halfway through, until golden brown and mostly cooked through.

Peel and chop or blend [soup](yellow onion) and [soup](garlic clove), and finely chop or puree [soup](celery stalk). I love using my Vitamix and blitzing everything.

Peel and chop [soup](carrot) into thin slices.

Set Instant Pot to sauté on HIGH. When hot, add [soup](extra virgin olive oil). Add the minced/pureed garlic, chopped/pureed onion, celery. Sauté for 3-4 minutes until softened and fragrant.

Add the sliced carrots, (rinsed and drained), [soup](dried basil), [soup](dried parsley), [soup](white pepper), and [soup](pink salt) and sauté for 30 seconds to toast the spices.

Add [soup](white basmati rice) and [soup](filtered water) and deglaze the bottom of the pot. Press CANCEL to stop sauté mode.

Place the air-fried meatballs into the soup. Add [soup](gluten-free chicken broth) on top and do not stir. Close the lid and set the Instant Pot to HIGH pressure for 8 minutes. Allow a natural release for 10 minutes.

Stir the soup and adjust seasoning if needed. Add [garnish](fresh parsley) (chopped) and [garnish](fresh basil) (chopped), stirring to combine.

Ladle into bowls, top with [garnish](crushed red pepper flakes) (optional) and serve hot.
