Recipe Steps
Step 1
Remove [protein](extra firm tofu) from the package and wrap it in paper towels. Place a heavy pan on top to press out excess water. Let it sit for 30 minutes.
Step 2
Set your pellet grill to 225°F. Consider using applewood pellets as they add a sweet and mild flavor.
Step 3
In a small bowl, combine [dry rub](pink salt), [dry rub](ground black pepper), [dry rub](garlic powder), [dry rub](onion powder), [dry rub](chili powder), and [dry rub]( ground turmeric). Mix well.
Step 4
Unwrap the tofu and slice it into thin, uniform pieces. Dredge each slice in [protein](cornstarch), then press into the dry rub to coat evenly. Place the slices on a greased mesh heat-safe pan.
Step 5
Place the pan on the preheated grill. Line a baking tray under the mesh pan to minimize cleanup. Smoke for 1 hour.
Step 6
While the tofu smokes, combine [glaze](gluten-free tequila), [glaze](coconut sugar), zest and juice of [glaze](lime) in a small saucepan. Simmer over medium-low heat for 5 minutes, stirring often. Remove from heat, cover, and set aside.
Step 7
After 1 hour, rotate the tofu 180 degrees and apply a thin layer of glaze to one side. Smoke for 15 minutes. Flip the tofu, apply glaze to the other side, and increase the grill temperature to 450°F (or the highest setting available).
Step 8
Grill the tofu for 20 minutes, watching closely to avoid burning. Remove the pan from the grill and apply a final layer of glaze to both sides.
Step 9
Serve the tofu with additional glaze on the side. Enjoy warm!
